I made some tiny little cupcakes this week and wanted a quick idea for decorating. I have had some desiccated coconut lying around in my cupboard for ages and came up with the idea of sticking it to the top of the cupcakes with strawberry jam. After fiddling about, I decided the easiest way to do this was to take the paper cases off, dip them upside down into the jam and then into the coconut.
I’m really pleased with the result. What do you think?
The children thought they were delicious and they made a great after-school snack.
